Preheat the oven 180 c and line a baking tray with parchment
Place the lemon zest, thyme, salt and honey if using in a blender - pulse to combine fully
In a clean bowl, crack the egg and separate the white from the yolk, whisk the egg white till frothy
Toss the nuts in the egg white make sure all nuts are coated in the egg white, sprinkle the lemon and thyme mix over the nuts stir to coat evenly and add the cracked black pepper
Scatter the nuts on the prepared baking trayBake for 10 minutes, checking regularly and shaking the tray gently to keep nuts from burning and to give even roasting.
