Amazing Luxury Ginger and Chocolate Bars – Make Now

Again with the protein bars, I know you are probably thinking give it a rest already!! but I can’t, and I shan’t – these little bars of delight are a life saver when you are in a pinch for time but don’t want to skip a meal.  They are also great for adding to yours or your child(ren)s lunch boxes. And quiet frankly, doesn’t  everyone love a delicious chocolate bar?!

THE LOWDOWN:

Ginger – has long been used for settling upset stomachs and reducing the symptoms of nausea. But did you know it is also a powerful anti inflammatory with similar properties to those found in over the counter drugs like aspirin and ibuprofen? thanks to the active compounds gingerol and zingibain, There have also been studies to suggest the active compounds found in ginger can help relieve arthritic pain. so next time you have a cold, or headache or just plain feeling queasy, just reach for some ginger. You are spoilt for choice in the form it comes in, from root to capsule.

Buying and Storing – for cooking where ever possible I would suggest going with the fresh root. The dried, powdered root has higher levels of the above mentioned active compounds. The fresh root won’t last long, it can be kept in the fridge away from too much moisture, or left on a sunny window sill in shallow water. Within a few weeks it will start to sprout new rhizomes. You can either plant this out in soil or move it to a better suited container and keep topping up the water as it grows.

Instructions

1

Preheat the oven 180 c

2

In a large clean bowl, mix all the dry ingredients together

3

Add the wet ingredients to the dry ingredients and mix well

4

Leave to rest for 10 minutes, whilst you prepare the baking tin

5

Line a baking tin with baking parchment

6

Spread the mixture out evenly on the baking parchment and smooth out with damp spatula

7

Pre-score the mixture into the desired squares or bars

8

Bake for 10 minutes

9

Remove from the oven and leave to cool, then store in an airtight container

Notes

#Top Tip# Pre-cutting the mixture into the desired shape will make for neater edges. Adding nuts or seeds to the mixture before baking will add some delicious crunchy texture. If you know that your oven doesn't bake evenly, turn the baking tray around half way through baking for an even finish.
